Even with such accomplishments, he admits there are days when his diet doesnt go as planned. The key, he says, is how he talks to himself after a slip-up.
You have to allow yourself some grace, Roker explains. But sometimes you need a realistic conversation with yourself. Health is a habit, and once you break it for a while, restarting can be harder. So occasionally, I have what my dad called a come to Jesus talk with myself: Time to get back on the horse. Lets go.
Previously, Roker struggled with an all-or-nothing mindset, often seeing a small dietary mistake as a total failure. I used to think, If Im not perfect, then why bother? he shared. Now, I remind myself that something is better than nothing. If I stray, I just pull back, reset, and do better.
This approach helps him avoid letting one indulgence turn into days of unhealthy choices. He applies the same philosophy to exercise, emphasizing that every step counts. Some days you might not feel up to it, and thats fine. But most days, you push yourself. Overcoming inertia builds momentum, and momentum beats inertia, he says.
Roker also credits the Start TODAY app for helping him stay consistent, offering short workouts, quick meditations, and simple healthy snack ideas. His philosophy now prioritizes balance over perfection, understanding that occasional slip-ups are part of the process. The goal is to increase the number of times you do things that make you feel better. If you can raise that average, youve succeeded, he notes.

After health challenges in 2022, including blood clots and gallbladder surgery, Roker began focusing more on nutritious meals at home, emphasizing protein and healthy fats. He keeps his cooking simple: If it has 20 ingredients, Im out. Pan-seared chicken thighs with salt, pepper, and maybe smoked paprikathats enough.
The Start TODAY app provides him with easy recipes under 10 ingredients, like Chicken Spinach Parm, Mediterranean Shrimp and Veggies, and Breakfast Burritos. While he has tried keto and low-carb diets, his current approach is more Mediterranean, incorporating whole grains and vegetables like quinoa, brown rice, sweet potatoes, and Brussels sprouts while reducing red meat.
Shopping habits also matter to Roker. He prefers local farmers markets for fresh produce and enjoys interacting with the growers rather than rushing through supermarkets. Despite his focus on health, he allows himself moderation. You can enjoy many foodsjust dont overdo it, he says. And if he does indulge too much, he simply returns to his routine: Pull back, start again, and do better.
